How to Make Smoked Duck Soft Tacos - with Plum Sauce and Mandarin Pancakes

This weekend I fired up the Grill Dome to make some awesome duck soft taco. These tacos were a winner in our family.

Ingredients

Duck 1
For plum sauce
Sugar 1/4 Cup (4 tbs)
Water 1 Tablespoon
White vinegar 1/4 Cup (4 tbs)
Plum preserve 13 Ounce
Soy sauce 1 Tablespoon
Chinese chili garlic sauce 1 Tablespoon
Grated fresh ginger 2 Teaspoon
For pancake
All purpose flour 2 Cup (32 tbs)
Boiling water 2/3 Cup (10.67 tbs) (or more if needed)
Sesame oil 1 Tablespoon (as needed)

Directions

GETTING READY

1. Preheat grill to 250 degree F.

MAKING

For Plum Sauce:

2. Place a saucepan over high flame, add sugar and water. Stir until the mixture turns into caramel color.

3. Pour vinegar and stir until sugar dissolves.

4. Stir in plum preserve, soy sauce, chili garlic sauce, and grated ginger. Blend until smooth and set the pan aside.

For Smoked Duck:

5. Place duck on grill and cook until the internal temperature reaches 160 degree F, basting it with the sauce every 15-20 minutes.

6. Remove duck from heat and set aside to rest for 10 minutes. Shred meat and set aside.

For Pancake:

7. In a bowl, mix flour and boiling water to form dough.

8. On floured surface transfer the dough and knead for 5 minutes or until nice and smooth.

9. Divide dough into small balls. Dip the balls in sesame oil and roll 2 balls at a time as shown in the video into a thin sheet.

10. Heat pizza stone/cast iron skillet on grill and cook pancake on it.

SERVING

11. In between two pancakes, place shredded duck meat, drizzle sauce, add your favorite topping, serve and enjoy!
