It is always great to have light nibbles on hand while the final meal preparations are underway, having a fresh and healthy snack that can be made the night before makes party planning simple. Not just for dips, you can dress up your celery stalks by stuffing them with anything from sweet salads to savory dishes like this Clementine Chicken Salad. And if there are any left over, pop in the fridge and serve them as healthy snack.

Ingredients

Chicken breast 2
Greek yogurt 1/2 Cup (8 tbs)
Fresh cilantro 1 Pinch
Fresh ginger 1 Tablespoon (grated)
Sliced almonds 1/4 Cup (4 tbs)
Clementine marinade 2 Cup (32 tbs)
Celery 6 (Stalks)

Directions

GETTING READY

Marinate your chicken breast overnight in the Citrines Clementine Asian Dressing.

MAKING

2. Bake the marinated chicken breast at 385 degrees F for 25 minutes (or until fully cooked) and then let rest for 10 minutes before you dice them into small pieces.

3. Cut your Biggest Loser Celery stalks in half along the wait to create small 2-inch sticks.

4. In a large mixing bowl, add the chicken, Greek yogurt, cilantro, and ginger, and then mix until fully blended.

5. Spoon the mixture across the top of each celery stick, and then top with almonds before serving.

SERVING

6. Serve right away.
