Taco Pizza!!! Cornbread crust with taco toppings.
|For cornmeal pizza crust:|
|Cornmeal||3/4 Cup (12 tbs)|
|All purpose flour||1/2 Cup (8 tbs)|
|Baking powder||1 Teaspoon|
|Milk||1 Cup (16 tbs)|
|Melted butter||4 Tablespoon , divided|
|Taco filling||2 Cup (32 tbs)|
|Grated cheese||1 Cup (16 tbs)|
|Garnishes||1 Cup (16 tbs) (to taste, shreded lettuce, chopped green onions, diced tomato, sour cream, salsa)|
Preheat oven to 400°F.
Melt butter in cast iron skillet.
In a bowl, combine cornmeal, all purpose flour, baking powder, salt, milk and mix well.
Transfer the mixture into cast iron skillet and pop into oven.
Bake for 10-15 minutes.
Once done, spread taco filling on top and sprinkle cheese over it.
Pop into oven again and bake for another 5 minutes.
Allow to cool and garnish as desired.
Slice into wedges before serving.
