Pasta Italian Food - Spanish Spaghetti My Spanish Pasta

Linguine 1 Pound (or any kind of pasta)
Canned crushed tomatoes 1 Can (10 oz)
Spanish chorizo 1 Pound , sliced (1/2 inch thick)
Canned roasted red peppers 1 1/2 Can (15 oz) (in brine or oil)
Olive oil 2 Tablespoon (as needed)
Chicken stock 2 Cup (32 tbs) (1
Black olives 1/3 Cup (5.33 tbs)
Spanish green olives 1 Cup (16 tbs) (or 1/2 cup green and 1/2 oiled cured black olives)
Garlic 6 Clove (30 gm) , minced (4
Red onion 1/2 , finely minced
Crushed rosemary 1/2 Teaspoon
Crushed thyme 1/2 Teaspoon
Sage 1/2 Teaspoon
Dried crushed oregano 1/2 Tablespoon
Dried tarragon 1/2 Teaspoon



In a large skillet, heat olive oil over medium-high heat.

Add the chorizo and until lightly brown.

Stir the garlic and cook until it is fragrant.

Add onion to pan and sauté for a few minutes.

Pour the tomatoes and cook until soft, mash up a bit with a spoon.

Season with oregano, rosemary, thyme, tarragon and sage and cook for a minute, followed by red flakes and black pepper.

Add olives, sherry, capers, and smoked paprika. Bring to a boil reduce heat, and simmer for 15 minutes.

Stir in roasted peppers and cook for 2 mins.

Turn off the heat and add in saffron. Place lid and set aside.

Cook the linguine according to package directions, without salt or oil.

Drain and add to the sauce cook for 2 minutes or until thoroughly heated.


Garnish with some Spanish cheese and serve.
