Grilled Pineapple and Bananas Foster

I've put a twist on a famous dessert that was born in the city of New Orleans at Brennan's restaurant in the late 1950's, by not only grilling the bananas, but by also adding in grilled pineapple for more of a delicious tropical flavour.

Ingredients

Fresh pineapple slices 6
Bananas 4 , sliced lengthwise
Dark brown sugar 1 Cup (16 tbs)
Ground cinnamon 1/2 Teaspoon
Unsalted butter 1/4 Cup (4 tbs) (1/2 Stick)
Banana liqueur 1/4 Cup (4 tbs)
Dark rum 1/4 Cup (4 tbs)
Honey 3 Tablespoon
Lime juice 1 Tablespoon (Of 1/2 Lime)
Cayenne pepper To Taste

Directions

GETTING READY

1. Prepare the grill with the griddle for cooking.

 

MAKING

2. Mix together honey, lime juice and cayenne pepper in a bowl. Brush it over the pineapples on both sides.

3. Place the pineapple slices on the griddle. Grill them on both sides. Cut into smaller pieces and put them aside.

4. Place banana halves on the grill, flesh side down. Grill for a couple of minutes.

5. Flip and grill on the skin side, until it turns dark. Cut in pieces and set aside.

6. Heat a cast iron skillet on the grill. Melt butter in the skillet. Add dark brown sugar to the butter. Cook until the color changes and everything is well incorporated. Drop cinnamon, mix it in.

7. Pour banana liqueur, stir it in. Add rum and flambe the sauce.

8. Drop the grilled bananas and pineapples to the sauce. Stir to coat them well.

 

SERVING

9. Serve the fruits with ice cream. Enjoy!
