Battered Fried Cauliflower Fritters

Cauliflower 1
Salt To Taste
Vegetable oil 2 Cup (32 tbs) (For Deep Frying)
For batter:
All purpose flour
Dry mustard 1/4 Teaspoon
Pepper To Taste
Parmesan cheese 1/2 Cup (8 tbs)
Egg 1 , separated
Vegetable oil 1 Tablespoon
Water 1/4 Cup (4 tbs)



1) Break the cauliflower into flowerets that are about 1 ½ inches at the widest point. Throw away the main stem.

2) Preheat oven to temperature of 225 degrees.


3) Boil a large saucepan of salted water and add the cauliflower. Return to a boil and then slightly lower the heat. Cover the pan and gently simmer for about 5 minutes, till the cauliflower is just soft.

4) Thoroughly drain and leave to cool.

5) To prepare the batter, into a large bowl, sift the flour with the mustard, salt to taste and a sprinkling of pepper.

6) In the center of the sifted ingredients, make a well.

7) Beat the egg yolks with the water and oil and pour the mixture into the well, drawing the flour into the liquid gradually with the help of a wooden spoon. Beat well in order to form a coating batter.

8) In a deep-fat fryer, heat the oil to temperature of 400 degrees, till a stake bread cube browns in about 40 seconds in the oil.

9) Beat the egg whites on a clean, dry bowl till they are standing in stiff peaks. Fold them into the batter with the help of a large metal spoon.

10) With the help of a slotted spoon, dip a batch of the flowerets into the batter and coat well.

11) Fry in the hot oil for about 4 minutes, till golden brown.

12) Remove from the oil using the slotted spoon and drain on paper towels.

12) Keep the done flowerets warm in the preheated oven while cooking the others.


13) Transfer the hot fritters to a serving plate and serve while still hot. These make a delectable appetizer and can be served with a dipping sauce of choice on the side.
