Fresh Corn Fritters

Ingredients

Pancake mix 5 Tablespoon
Salt 1/4 Teaspoon
Pepper 1/8 Teaspoon
Parmesan cheese 1/2 Cup (8 tbs) , shredded
Eggs 2 Small , slightly beaten
Corn kernels 2 Cup (32 tbs) (Uncooked)
Pimiento 2 Tablespoon , chopped
Onion/Green onion 1 Tablespoon , chopped
Canned green chili 2 Tablespoon , chopped (California Style)
Butter/Margarine 2 Tablespoon

Directions

GETTING READY

1. In a bowl combine salt, cheese, pepper and pancake mix.

2. Blend pimiento, chilies, corn, eggs and corn well.

MAKING

3. In a griddle or frying pan add butter and heat.

4. Use a spoon to drop the vegetable mixture in the pan. ( 2tblsp for 1 fritter)

5. Flatten the mixture with the back of spoon.

6. Cook for 3 minutes in medium heat or till the mixture turns light brown in color.

FINALIZING

7. Turn the ingredients and cook for 3 minutes more.

SERVING

8. Serve fresh corn fritters immediately.
