Clam Fritters

Ingredients

Sifted all purpose flour 2 Cup (32 tbs)
Baking powder 2 Teaspoon
Salt 1 Teaspoon
Pepper 1/4 Teaspoon
Shucked hard shell clams 2 Cup (32 tbs)
Milk 2 Tablespoon
Lemon juice 1 Tablespoon (Of 1/2 Lemon)
Eggs 2 , beaten
Grated onion 2 Teaspoon
Worcestershire sauce 1/2 Teaspoon
Melted butter 1 Tablespoon
Fat 2 Cup (32 tbs) (For Deep Frying)

Directions

GETTING READY

1 In a bowl sift flour along with baking soda, salt and freshly grounded pepper.

2 Chop the clams and keep the liquid aside after draining.

MAKING

3 Add enough milk to the clam liquid so that it becomes 3/4th of a cup in quantity.

4 Add lemon juice, eggs, worcestershire sauce and grated onion to the clam liquid.

5 Stir this mixture in to the sifted flour and beat well.

6 Finally stir in the chopped clams and butter.

7 In a deep frying pan heat fat (375 degrees farenheit on a frying thermometer) and drop the mixture by tablespoons.

8 Fry until golden brown and crisp.

9 Drain the fritters on paper towels before serving.

SERVING

10 Serve immediately with tomato sauce.
