Cauliflower Fritters

Cauliflower 1 Pound , cut in florets
Dry bread crumbs 3/4 Cup (12 tbs)
Parmesan cheese 1 Ounce , grated
Parsley 1 Tablespoon , chopped
Eggs 3 , beaten
Butter 1 Tablespoon
All purpose flour 2 Tablespoon
Milk 1/4 Cup (4 tbs)
Prepared mustard 1/2 Teaspoon
Shredded cheddar cheese 1 1/2 Ounce
Cayenne pepper 1 Dash
Salt To Taste
Pepper To Taste


Boil cauliflower in 1/2 cup water 4 to 5 minutes, drain well.

Combine bread crumbs, Parmesan cheese and parsley together; season with salt and pepper.

Dip cauliflower florets in beaten egg, coat in bread crumb mixture and place on a serving plate.

Set aside.

To make Cheese Sauce, melt butter in a small saucepan, stir in flour and cook 1 minute.

Remove from heat and stir in milk gradually.

Bring to a boil and simmer 2 minutes.

Add mustard, cheese, cayenne, salt and pepper; heat just until cheese melts.

Serve hot.
