Fish Fritters

Ingredients

Small fish 1 Pound
Eggs 3 , separated
Flour 3 Tablespoon
Salt 1/2 Teaspoon
Pepper 1/8 Teaspoon
Minced garlic 1/8 Teaspoon
Minced parsley 1 Tablespoon

Directions

Cook fish, remove skin and bones and mash.

Beat egg yolks until light and thick, then add flour,, salt, pepper, garlic, parsley and fish.

Fold in whites of eggs beaten until stiff.

rop by tablespoons into1 hot deep fat (360° to 370°F.) and fry until brown.

Serves 4.

Add 1/2 cup diced drained pineapple.
