Drain, bone and mash the sardines with lemon juice and plenty of seasoning.
Cut the crusts from the bread, spread with butter; do not be too generous, since sardines are very oily fish.
Sandwich the bread with the mashed sardines, cut into about 12 fingers.
Beat the egg and milk, dip the fingers in this.
Put any oil from the can of sardines into the pan plus the fat.
Heat gently until the fat has melted, then fry the sardine fingers until crisp and brown on either side.
Drain on absorbent paper and serve at once.
