In this video, Betty demonstrates how to make Loaded Paradise BLT Home Fries. This recipe is based on the Loaded Home Fries that Rick and I sampled during our recent breakfast at Lynn's Paradise Café in Louisville. This recipe may not have exactly the same ingredients as the Loaded Home Fries we had at Lynn's, but it will give you an idea of how to put together a similar dish.
Potatoes | 2 Large , made into home fries (Bettys Hearty Home Fries) | |
Fresh spinach leaves | 1/2 Cup (8 tbs) | |
Tomatoes | 1/4 Cup (4 tbs) , diced | |
Purple onion | 1/8 Cup (2 tbs) , diced (to taste) | |
Crisp bacon strips | 2 Medium , crumbled | |
Monterey jack cheese | 1/2 Cup (8 tbs) , finely grated | |
Horse radish flavored sour cream | 2 Tablespoon (dressing) |
GETTING READY
1. Preheat the oven to 400 degrees F.
2. Prepare the potatoes following the Betty’s Hearty Home Fries. Set aside.
3. Wash the spinach leaves. Pat them dry with a paper towel. Cut off the stems and remove the veins. Tear the leaves into small pieces. Set aside.
MAKING
4. In a baking dish or oven proof large plate, spread the home fries . Layer it with fresh spinach, tomatoes, red onions, bacon and Monterey Jack Cheese one after the other with the cheese being the top most layer.
5. Place it in the oven and bake for 5 minutes. Turn the setting to broil and cook for another 2 minutes.
6. Remove from oven and spread the horseradish sour cream dressing on top as desired.
SERVING
7. In a serving plate, serve the loaded home fries hot.
