Ratatouille

Ingredients

Eggplant 1 , cubed
Onion 1 , sliced
Green pepper 2 , sliced
Garlic cloves 2 , minced
Zucchini 4 , sliced (3
Roma tomato 10 , peeled, chopped (8
Bouquet garni 1
Olive oil 6 Tablespoon , divided
Salt and pepper To Taste

Directions

MAKING

1. In a large pan, heat 3-4 tablespoons of olive oil and brown eggplant cubes in it.

2. Add tomato, onion, green pepper, garlic, zucchini, bouquet garni, salt, and pepper. Turn the heat down to medium low, cover and simmer for 30 minutes.

3.Remove the lid, add 2 tablespoons of olive oil, stir and simmer for 15 minutes or until the liquid reduces by half.

SERVING

4. Serve and enjoy!
