Mango Ginger Mousse by Tarla Dalal

The rather unusual combination of mangoes and ginger gives a unique and unbeatable flavor to this mousse. It is amazing how the shades of ginger, lemon, and mint give a completely new look to the otherwise common mango dessert. Taste the mixture after adding all the ingredients, and balance the ginger and lemon flavors as per your individual preference.

Ingredients

Alphonso mango pulp 1 Cup (16 tbs)
China grass 5 Gram , blended into a smooth powder (agar agar)
Milk 1/4 Cup (4 tbs)
Sugar 2 1/2 Tablespoon
Lemon juice 1 Teaspoon
Ginger juice 1 Teaspoon (adrak)
Crushed mint leaves 1 Teaspoon (pudina)
Whipped cream 3/4 Cup (12 tbs) , beaten
Hot water 1/3 Cup (5.33 tbs)
For the garnish
Whipped cream 3 Teaspoon
Mango cubes 3
Finely chopped mint leaves 1 Teaspoon

Directions

GETTING READY

1. In a deep pan, soak china grass (agar-agar) in 1/3 cup of hot water and keep aside for ten minutes.

2. Now add mango pulp, milk, and sugar. Mix properly and bring to boil, while stirring continuously. Turn off heat and strain using a sieve.

MAKING

3. Into a steel bowl, transfer the entire mix and place it in a deep vessel filled with ice-cubes for around 10 minutes to allow the mixture to cool and thicken. Now, whisk the mixture in a vigorous way to avoid formation of lumps.

4. Fold in ginger juice, lemon juice, mint leaves, and beaten whipped cream in a gentle way.

5. Now take 3 glasses, and pour the mixture equally into them. Refrigerate for an hour or two to allow the mousse to set properly.

SERVING

6. Serve the mousse chilled after garnishing with a swirl of beaten whipped cream, a mango cube, and a few mint leaves.
