Mexicans have adopted the French crêpes, innovating with different stuffings. They are also used in desserts.


Plain flour 1/2 Cup (8 tbs)
Corn flour 1/2 Cup (8 tbs)
Milk 1/2 Cup (8 tbs)
Salt 1 Pinch
Melted butter 1 Tablespoon
For greasing and cooking
Butter 1/2 Tablespoon (For greasing and cooking)



1. In a large bowl, combine plain flour, corn flour, milk, ½ cup of water, salt and melted butter. Whisk until no lumps remain.

2. Heat a non-stick pan and brush it lightly with butter.

3. Let the pan cool slightly and then pour a ladleful of the mixture. Tilt in a circular motion to spread. Cook using a little butter until light pink spots appear on both the sides Repeat with the remaining batter.


4. Serve as desired with honey, jam or with ice cream.
