Bacon and Onion Potatoes Au Gratin - A Cheesy Side Dish That Everyone Will Love!

Here is my take in a cheesy bacon and onion potatoes au gratin. This cheesy, bacony goodness was a fabulous side dish and simple to make.

Ingredients

Olive oil 1 Tablespoon
Bacon 1/2 Pound , chopped
Onion 1 Large , chopped finely
Flour 2 Tablespoon
Cold milk 3 Cup (48 tbs)
White cheddar cheese 2 Cup (32 tbs) , shredded
Colby jack cheese 2 Cup (32 tbs)
Potatoes 2 Pound , sliced to about 1/8th inch thick

Directions

GETTING READY

1. In a large bowl, soak the sliced potatoes in water till used.

2. Preheat the oven to 400 degrees F.

MAKING

3. In a sauce pan heat oil on medium heat. Add the bacons and sauté till it renders fat.

4. Put the onions and stir to mix. Cook till they turn translucent. Sprinkle flour and continue to stir till mixed.

5. Slowly pour the milk while stirring continuously. Let it heat through and beign to bubble. Add 1 cup of cheddar and 1 cup of Colby jack cheese. Stir to mix and cook till it thickens to desired consistency.

6. In a baking dish or oven proof skillet, spread little cheese mixture to cover the bottom. Arrange the soaked potatoes in a single layer. Pour the cheese mixture over it till covered.

7. Repeat this till all the potatoes are layered. Finish the layering with the cheese mixture. Sprinkle the remaining cheddar and Colby jack cheese generously on top.

8. Bake in the preheated oven for around 50 minutes or till the potatoes are fully cooked. Remove from the oven and let it sit for a few minutes before serving.

SERVING

9. In a serving plate, serve the potato au gratin as side to any main dish of choice.
