French Onion Soup with Port

A wonderfully light, easy soup, bursting full of flavour, topped with a giant crouton and a pile of melted cheese. A good stock is key to this dish so try to use a nice home-made beef stock where possible. Failing that, a vegetarian stock will do the trick, but try to avoid using instant bouillon cubes!

The use of red wine is quite traditional, but the port here gives it a wonderful hint of sweetness as well!


Stock 2 Liter (good quality stock)
Butter 50 Gram
Olive oil 4 Tablespoon
Onions 7 , peeled and sliced finely
Garlic 4 Clove (20 gm) , mince
Red wine 100 Milliliter
Port 100 Milliliter
Plain flour 2 Tablespoon
Thyme 3 Teaspoon , dried
Salt 2 Teaspoon
Pepper 2 Teaspoon
Bread slices 4 (good quality bread)
Cheese 100 Gram , grated (Gruyre, Emmental, Cheddar etc)



1. Start off by mincing the garlic, and then peel and slice the onions finely.


2. In a large pan, melt the butter and add the olive oil as well.

3. When the butter has melted, add the onions, garlic and the thyme. Sauté the onions in the butter and oil and lower the heat slightly.

4. Continue cooking the onions down, stirring regularly, until they have significantly reduced in volume.

5. When the onions have cooked down add the flour to the onions and stir well to completely mix the onions with the flour.

6. Add the stock, salt and pepper and then stir.

7. . Pour in the red wine and then bring almost to the boil, before lowering the temperature, covering, and simmering lightly for about 20 minutes to allow the flavours to infuse through the stock.

8. After the soup has simmered for some time remove the lid and pour in the port and then stir.


9. Serve the soup into bowls, place the bread toasted side down into the soup and sprinkle liberally with the grated cheese before placing under the grill / broiler for a couple of minutes until the cheese has melted. Serve immediately and enjoy.
