Three Cheese Souffle

Ingredients

Butter/Margarine 1/3 Cup (5.33 tbs)
All purpose flour
Milk 2 Cup (32 tbs)
Dijon mustard 1 Teaspoon
Salt 1/4 Teaspoon
Hot pepper sauce 1 Dash
Shredded swiss cheese 6 Ounce (1 1/2 Cups)
Shredded cheddar cheese 4 Ounce (1 Cup)
Shredded parmesan cheese 1/4 Cup (4 tbs)
Eggs 6 , separated
Cream of tartar 1/2 Teaspoon

Directions

GETTING READY

1. Preheat oven 325°.

MAKING

2. In a medium saucepan, melt butter.

3. Stir in flour and cook for 1 minute.

4. Add milk, mustard, salt and hot pepper sauce and cook until thick.

5. Put cheese, stir until the cheese melts.

6. Remove from heat and set it aside.

7. In a small mixing bowl, whisk egg yolks until thick and lemon-colored, about 3-4 minutes.

8. Mix in 1/3 cup cheese mixture.

9. Return all into saucepan and cook for 1-2 minutes.

10. Cool it completely, about 30-40 minutes.

11. In another mixing bowl, whisk egg whites.

12. Put cream or tartar and continue beating until stiff peaks form.

13. Fold into cheese mixture.

14. Pour 1-cup into ungreased souffle dishes or custard cups.

15. Place in a shallow pan.

16. In a large pan, pour water to a depth of 1 inch.

17. Bake, uncovered for 40-45 minutes.

SERVING

18. Serve immediately.
