Canned Tomato Ratatouille

Ingredients

Eggplant 1 Medium , peeled and diced
Garlic 1 Clove (5 gm) , minced
Small onion 1 , thinly sliced
Olive oil 2 Tablespoon
Green pepper 1 , sliced
Zucchini 1 Medium , sliced
Salt 1 Teaspoon
Pepper 1/4 Teaspoon
Oregano 1/2 Teaspoon
Stewed tomatoes 16 Ounce (1 Can)

Directions

MAKING

1. In a glass casserole, take eggplant, garlic, onion and oil. Mix it well.

2. Cover it and microwave on high for 4 minutes or until done.

3. Add green pepper and zucchini. Mix it well.

4. In a separate bowl, mix salt, pepper, oregano and tomatoes.

5. Top it over the vegetables. Cover and microwave on high for 8-10 minutes or until done.

6. Keep it aside for 5 minutes covered.

SERVING

7. Serve Ratatouille with grated cheese.
