Corn And Crab Bisque

Ingredients

Unsalted butter 1/4 Cup (4 tbs)
Onion 1/4 Cup (4 tbs)
Flour 2 Tablespoon
Corn 4 Cup (64 tbs) , pureed (Fresh Or Frozen, Uncooked)
Milk 1 Quart
Whipping cream 1 Cup (16 tbs)
Salt To Taste
Freshly ground white pepper To Taste
Cooked crab meat 1 Pound
Curry powder 1/2 Teaspoon

Directions

MAKING

1) In a 2-quart saucepan, melt butter over medium flame.

2) Add in the onions and saute the mixture till it softens.

3) When the onions start to sizzle, add in the flour. Stir the flour in, for about a minute.

4) Add in the curry powder and corn. Cook the mixture for 5 minutes.

5) Add in milk, whipping cream, salt and pepper. Allow the mixture to boil.

6) Next, add in crab meat. Heat the mixture for 5 minutes.

SERVING

7) Serve the Corn and Crab Bisque hot, garnished with chopped parsley.
