Crab Meat Au Gratin

Ingredients

Butter stick 1/2
Celery heart 1 , chopped
Onions 2 Large
Lump crabmeat 1 Pound
Eggs 2 , well beaten
Evaporated milk/Heavy cream 1 Can (10 oz)
Velveeta cheese 1/4 Pound , melted

Directions

MAKING

1) In a saucepan, melt butter and sauté celery and onions until lightly browned.

2) Stir in the crabmeat, eggs, milk and simmer for 5 minutes stirring constantly.

3) Cook until well blended and heated through.

4) Place equally in 4 soup bowls and spoon cheese over the top.

5) Put the bowls under the broiler for 2 minutes until lightly browned.

SERVING

6) Serve hot sprinkled with chopped parsley if desired.
