|Fresh peaches||6 Medium , pureed to make 2 cups|

|Lemon extract||1/2 Teaspoon|
|Vanilla extract||1/2 Teaspoon|
|Lemon juice||1/4 Teaspoon , freshly juiced|
|Diet crepes||4 (warm)|
|Plain low fat yogurt||1/4 Cup (4 tbs) , divided|
1 Prepare the Peach sauce: In a medium-size saucepan, add peach puree and honey.
2 In a bowl, dissolve cornstarch in water.
3 Gradually stir into the puree.
4 Bring to a boil over medium heat and cook, stirring constantly, until the mixture thickens.
5 Remove from heat and blend in extract.
6 Place in the refrigerator and chill.
7 If you desire a finer textured sauce, strain after removing from heat.
8 In a medium-size bowl, combine banana with the prepared Peach Sauce, vanilla extract, and lemon juice.
9 Mash the mixture well.
10 Evenly spread the crepes with the mixture and roll up.
11 Top each crepe with 1 tablespoon yogurt and a strawberry (optional)
