Ripe banana 1 Large
For peach sauce
Fresh peaches 6 Medium , pureed to make 2 cups
Honey 1 Tablespoon
Cornstarch 1 Tablespoon
Water 1/4 Cup (4 tbs)
Lemon extract 1/2 Teaspoon
Vanilla extract 1/2 Teaspoon
Lemon juice 1/4 Teaspoon , freshly juiced
Diet crepes 4 (warm)
Plain low fat yogurt 1/4 Cup (4 tbs) , divided
Fresh strawberries 4



1 Prepare the Peach sauce: In a medium-size saucepan, add peach puree and honey.

2 In a bowl, dissolve cornstarch in water.

3 Gradually stir into the puree.

4 Bring to a boil over medium heat and cook, stirring constantly, until the mixture thickens.

5 Remove from heat and blend in extract.

6 Place in the refrigerator and chill.

7 If you desire a finer textured sauce, strain after removing from heat.

8 In a medium-size bowl, combine banana with the prepared Peach Sauce, vanilla extract, and lemon juice.

9 Mash the mixture well.

10 Evenly spread the crepes with the mixture and roll up.


11 Top each crepe with 1 tablespoon yogurt and a strawberry (optional)
