Strawberry Crepes

Cream cheese 8 Ounce (1 Package)
Sugar 6 Tablespoon
Orange rind 2 Teaspoon , grated
Ground cinnamon 1/2 Teaspoon
Strawberries 1 Pint , rinsed, hulled and sliced
Butter/Margarine 4 Tablespoon
All purpose flour
Salt 1/4 Teaspoon
Eggs 3
Milk 1 Cup (16 tbs)
Orange juice 1/2 Cup (8 tbs)
Orange flavor liqueur 1/4 Cup (4 tbs)



1) Preheat oven to temperature of 250 degrees.


2) In a small bowl, blend together the cream cheese, 2 tablespoons of sugar, orange rind and cinnamon. Add ½ cup of sliced strawberries and stir well. Keep aside.

3) Melt 1 tablespoon of margarine or butter and keep aside.

4) Into a sifter, measure 1 tablespoon of the remaining sugar and salt along with the flour. Beat the eggs in a medium-sized bowl till they are thick and sift the dry ingredients over them. Beat till the mixture is smooth and add the milk as well as the melted margarine or butter. Stir well.

5) Slowly heat an 8-inch heavy skillet. Sprinkle a few drops of water on the surface to test the temperature. If the drops bounce about, the temperature is right. With margarine or butter, lightly grease the pan.

6) Into the skillet, pour the batter, ¼ cup at a time. Tilt to completely cover the bottom and cook over medium heat for 1 to 2 minutes, till the top is set and the underside has turned golden. Turn and brown the other side as well. Stack the cooked crepes with a sheet of aluminium foil between each till it is time to add the filling. Repeat with the entire batter. This will make 8 crepes. Before making a new crepes, grease the pan.

7) Into the center of each crepe, put 2 iberal tablespoonfuls of the reserved cream cheese filling. Roll up the stuffed crepe and fold he ends under. Place in a shallow baking dish, with the seam side down.

8) In the preheated oven, keep the stuffed crepes warm.

9) In a medium-sized saucepan, melt the remaining 3 tablespoons of butter or margarine. Add the remaining 3 tablespoons of sugar as well as the remaining strawberries and orange juice. Stir well. Heat the mixture till it is bubbly.

10) Take the pan off the heat and add the liqueur. Stir well and pour the mixture all over the crepes.


11) Serve right away.
