Custard Souffle

Butter 3 Tablespoon
Plain flour 3 Ounce
Milk 3/4 Pint
Eggs 4
Castor sugar 2 Ounce


Well butter a pie-dish.

Melt 5 oz butter in a saucepan, add the flour and stir over the heat until well cooked but not coloured.

Add the milk; beat well until smooth.

Reheat, stirring continuously until the mixture thickens and comes away from the sides of the pan.

Let it cool slightly.

Beat in the egg yolks singly and add the sugar.

Stiffly whisk the egg whites and fold them lightly into the mixture.

Turn into the pie-dish and bake in a fairly hot oven (375° F., Gas 5) for 25-30 min.
