Tomato Bisque

Today I am going to make a really good rib sticking soup that is perfect for the cold weather. This time I have a couple of helpers to help me make the soup. Watch as we make a creamy, tomato bisque.

Ingredients

For tomato bisque:
Vegan butter 4 Tablespoon (like Earth Balance)
Vegan bacon 1 Tablespoon , fine julienned
Red onion 1 , chopped
Carrot 1 , chopped
Celery stick 1 , chopped
Minced garlic 2 Teaspoon
All purpose flour 1/4 Cup (4 tbs)
Vegetable stock 1 Quart
Canned peeled tomatoes 28 Ounce , roughly chopped (1 can, with liquid)
Parsley sprigs 3
Thyme sprig/1/2 teaspoon dried thyne 3
Bay leaf 1
Cashew cream 1 Cup (16 tbs)
Salt 1 3/4 Teaspoon (to taste)
Freshly ground black pepper 1 Teaspoon (to taste)
For cashew cream:
Cashew pieces 1/2 Cup (8 tbs) , soaked in water for 20 minutes
Water 1 Cup (16 tbs)
White pepper 1/4 Teaspoon
Salt 1/4 Teaspoon
