Canned sweet potatoes | 15 Ounce ((1 can)) | |
Pure maple syrup | 1 1/4 Cup (20 tbs) , divided | |
Unsalted butter | 2 Tablespoon | |
Granulated sugar | 1 Cup (16 tbs) | |
Eggs | 8 Large , separated ((at room temperature)) | |
Heavy cream | 1 Cup (16 tbs) ((at room temperature)) | |
Ground cinnamon | 2 Teaspoon |
GETTING READY:
Preheat oven to 350°F.
Grease soufflé dishes and dust with sugar.
MAKING:
In a large bowl, combine sweet potatoes, egg yolks (reserving whites), cream, ¾ cup of sugar, cinnamon, ¼ cup maple syrup and beat until smooth.
In another bowl, combine egg whites, remaining sugar and whisk until soft peaks.
Slowly mix sweet potato mixture with egg white mixture.
Arrange dishes on baking tray and fill with prepared mixture.
Pop into oven and bake for 20-25 minutes.
In a saucepan, heat remaining maple syrup.
SERVING:
Serve soufflés with warm maple syrup and enjoy!
