Bananas Foster French Toast

This Bananas Foster French Toast is one of the BEST brunch recipes I have ever tasted! Bananas are cooked until golden in a brown sugar spiced rum sauce, and it's topped on a fluffy challah french toast.

Ingredients

For the bananas foster
Butter 1/4 Cup (4 tbs)
Brown sugar 1/4 Cup (4 tbs)
Cinnamon 1/2 Teaspoon
Nutmeg 1/4 Teaspoon , freshly grated
Bananas 2 Large
Dark rum 1/4 Cup (4 tbs)
For the french toast batter
Challah bread slices 8 ((1
Eggs 2
Half and half 3/4 Cup (12 tbs)
Cinnamon 1/2 Teaspoon
Confectioner’s sugar 2 Teaspoon ((optional))
Butter 2 Tablespoon ((For greasing))

Directions

MAKING:

1. In a skillet set over medium heat, add the butter, brown sugar, cinnamon, and nutmeg. Cook and stir for a couple minutes until the butter is melted.

2. Slice the bananas in half through the center, then cut into three pieces. Add to the skillet and let cook for 2 minutes on each side, until the bananas are soft.

3. Remove the pan from the heat and add the rum. Return the pan to the stove and tilt to catch the flame and let the alcohol burn. Once the flame burns out, the sauce is done. Turn off the heat.

4. To make the french toast, whisk to combine the eggs, half and half, and cinnamon in a flat dish. Soak the challah in the mixture for two minutes on each side.

4. Heat a nonstick skillet over medium heat and melt about a tablespoon of butter. Cook the soaked challah on each side for about 2 minutes, until golden.

SERVING:

5. Serve the french toast with the bananas and spoon the extra sauce over the top.

6. Dust with confectioners sugar if desired. Enjoy!
