Peach Melba is a simple dessert of poached peaches, raspberry syrup and vanilla ice cream. It's elegant and perfect for summer!
Sugar | 1 Cup (16 tbs) | |
Water | 1 Cup (16 tbs) | |
Vanilla bean/1 teaspoon vanilla extract | 1 , sliced open | |
Firm peaches | 4 Large , halved, pitted | |
Fresh raspberries/12 ounce bag frozen, thawed | 3 Cup (48 tbs) | |
Powdered sugar | 2 Tablespoon | |
Fresh lemon juice | 1 Tablespoon | |
Vanilla ice cream | 1 Pint |
MAKING:
1.In a pot, combine sugar, water, vanilla bean and heat over medium flame. Cover and bring to boil. Stir constantly.
2.Bring syrup to simmer and peach halves. Poach for 2-3 minutes and then remove from syrup. Allow to cool completely and remove the skin.
3.Refrigerate the syrup and peaches for up to 24 hours or well chilled.
4.For the sauce, blend together raspberries and sugar in a blender.
5.Strain and add lemon juice. Refrigerate until serving.
SERVING:
6.Serve ice cream with peach halves, raspberry syrup and enjoy!
