Olive oil 2 Tablespoon
Onions 8 , chopped
Chicken stock 1 Liter
Dry white wine 3/4 Cup (12 tbs)

Preheat the grill.

Heat a frying pan with oil and butter. Once it melts sauté onions. Add salt and allow to caramelize for 30-40 minutes, until golden brown.

Add wine, thyme, bay leaf and cook until wine reduces to half. Scrape the bottoms of the pan.

Add chicken stock, port, salt, pepper and stir well. Allow to simmer for about 30 minutes.

Meanwhile, place baguette slices on a tray and rub with garlic and olive oil. Grill for 2 minutes by flipping halfway through.

Skim off foam and remove bay leaf and thyme from the soup. Remove French onion before turning off heat.

Top with baguette croutons and grated cheese before serving. Pop into oven and bake until cheese melts.
