Just in time for the holidays, this Crème Brûlée is spiced with Cinnamon to reflect the joys of the season. Delicious set custard is adorned with a cinnamon sugar crust!

Egg yolks 4
Egg 1
Sugar 1/2 Cup (8 tbs)
Whipping cream 2 Cup (32 tbs)
Vanilla essence 1 Teaspoon
Cinnamon 1 Teaspoon
Granulated sugar 2 Teaspoon

1. Preheat the oven to 350 F.

2. Take egg yolks and egg in a bowl. Whisk it with sugar.

3. Heat whipping cream with vanilla essence. Bring it to simmer and remove from heat when bubbles start to appear.

4. Pour the cream to the egg mixture, whisking the eggs constantly such that they are gradually tempered.

5. Strain the mixture and pour them in ramekins. Place the ramekins in an oven proof dish and fill the dish with hot boiling water until it reaches at least half way to the ramekins.

6. Place the dish in the oven and cook it for 20 to 30 minutes or until set but still slightly jiggly in the centre.

7. Remove from oven and let them cool down to room temperature.

8. Place the creme brulee in the refrigerator and let it cool completely for 24 hours.

9. Mix cinnamon with granulated sugar and spoon it over the creme brulee, rotate to spread it all over, then remove the excess.

10. Caramelize the top of the creme brulee with the help of a blow torch.

11. Serve it for holidays or any other time. Enjoy.
