Spelt crepes with artichoke caponata - vegetarian recipe

Ingredients

For 4 crepes:
Whole grain spelt flour 90 Gram (3/4 cup)
All purpose flour
Water 250 Milliliter (1 cup)
Salt 1 Pinch
White sesame seeds 1/4 Cup (4 tbs) (handful)
Extra virgin olive oil 2 Tablespoon (For greasing)
For the artichoke caponata:
Artichokes 4 , halved and cut into thin slices
White celery stalks 4 , strings removed, cut into strips
White onion 1 , chopped finely
Garlic 1 Clove (5 gm)
Raisins 50 Gram (1/3 cup)
Rice malt 1 Teaspoon
Cider vinegar 50 Milliliter (1/3 cup)
Capers 15 Gram , rinsed and drained (1 3/4 tbsp)
Fresh mint sprig 3 , chopped finely (a few)
Pine nuts 30 Gram (1/4 cup)
Green pitted olives 100 Gram , cut into rings (three 5 oz)
Salt 1 Pinch
Extra virgin olive oil 1 Tablespoon (a little)
For the acidulated water:
Water 500 Milliliter
Lemon juice 1/2 Tablespoon (from 1/2 lemon)

Directions

MAKING:

In a large bowl, sift spelt and all purpose flour. Add water, salt and stir well.

Cover with a plastic sheet and pop into refrigerator. Allow to chill for an hour.

Once the artichokes are cut, put them into acidulated water which would be a mixture of water and lemon juice.

Soak raisins in luke warm water for a while.

In a saucepan, heat olive oil. Add garlic, onions, artichokes, celery and sauté well.

Mix rice malt with cider vinegar and add to the saucepan. Stir well.

Add drained, squeezed raisins, capers, olives and stir well. Cover with a lid and cook until the vegetables soften.

Add pine nuts, mint, salt (to taste), mix well and turn off the heat.

Place a pan over heat, grease with olive oil and pour the crepe batter. Spread as shown in the video.

Sprinkle few sesame seeds and flip once bottom is cooked.

Place the side with sesame seeds facing bottom, fill the caponata mixture and roll as shown in the video.
