How to Make Creme Brulee

Who doesn't love pushing their spoon through a crackling sugar coated crust. I know it is a restaurant favorite recipe. Maybe nicer restaurants serve creme brulee. it isn't hard to make, and you can recreate this restaurant favorite at home.


Heavy cream 1 Quart
Vanilla bean 1
Sugar 3/4 Cup (12 tbs) (1/4th cup for coating)
Egg yolks 6



1. Preheat oven to 300F.



2.  In a heavy bottomed pan, pour in the cream. Take the seeds out of the vanilla bean and add to the pot, drop in the bean too.

3.  Allow the cream to boil for about 30 seconds, allow to cool.

4.  Whisk together sugar and yolks until light anf fluffy. Gradually whisk in the cream in small amounts.

5. Pour in this mixture into 6 ramekin dishes placed on a baking tray. Pout in about an inch of hot water into the tray. Bake at 300F for 30 minutes.

6. Allow to cool and regrigerate for a couple of hours.

7. Sprinkle about an teaspoon of sugar into each ramekin and using the blow torch form the brulee.



8.  Refrigerate for another 1 hour and serve.
