Grilling Fish in Aluminum Foil Packets

Grilling fish in aluminum foil packets with a beer braise adds a new dimension to this easy meal cooked on the grill. Using only a few fresh ingredients and a large sheet of foil, you can make these easy and delicious foil fish packets on the grill, BBQ or campfire.

Ingredients

Cod fillets 4
Fresh tarragon sprigs 4
Gold potatoes 3 , sliced
Garlic 4 Clove (20 gm) , minced
Shallot 1 , minced
Onion 1 Large , thinly sliced
Butter stick 1 , quartered
Beer 10 Fluid Ounce
Salt To Taste
Pepper To Taste

Directions

GETTING READY

1. Prepare two zones on the grill. One a direct heat zone and second a non direst heat zone, as shown in the video.

2. Spray the aluminium sheet with non stick cooking spray on the non stick side and set it aside.

MAKING

3. Place 4 slices of potatoes side by side on an aluminium foil sheet. Layer it with two slices of onions, so as to completely cover the potatoes.

4. Arrange one fillet of fish on potato layer. In the middle keep a chunk of butter.

5. Sprinkle shallots and garlic and arrange a piece of tarragon sprig in the center. Season it with salt and pepper.

6. Fold the packets, as tightly as possible, leaving space to pour the beer as seen in the video.

7. Pour 1/4th bottle of the beer in the packet and seal it well.

8. Repeat the process with each aluminium sheet.

9. Place the packets on direct heat side of the grill. Slide the packets to the non direct heat side when you hear the fish sizzling.

10. Cover the grill and cook the fish for 10 minutes.

11. Rotate the fish packets, cover and cook for additional 10 minutes.

12. Open the packets carefully to see if the fish is opaque and done by inserting a fork.

13. Cook for additional 10 minutes, if required.

SERVING

14. Place the packets on a serving dish. Open it gently and serve as it is.
