Devonshire Herrings

Ingredients

Herrings 4 Large , filleted
Salt To Taste
Freshly ground black pepper To Taste
Fresh white breadcrumbs 50 Gram
Dried thyme 1 Teaspoon
Dessert apple 1 , peeled and finely chopped
Onion 1 Small , grated
Butter/Margarine 40 Gram
Dry cider 300 Milliliter
Cornflour 2 Teaspoon

Directions

GETTING READY

1)Lightly grease the trivet with a little butter or margarine and place in the cooker.

MAKING

2)Sprinkle salt and pepper on herrings and mix it with breadcrumbs, thyme, apple and onion.

3)Bind the mixture with melted butter or margarine.

4)Stuff the mixture between the fillets and fold each fillet in half, and secure with cocktail sticks.

5)Keep fish on the trivet and bring it on high pressure and cook for 6 minutes,reducing the pressure immediately.

6)Lift out the fish and garnish it with apple slices, and keep hot.

7)After removing trivet from the cooker add cornflour, blended with a little cold water.

8)Let it boil, stirring constantly and simmer for a minute.

9)Adjust seasoning and pour over the fish.

SERVING

10)Serve this tasty Devonshire Herrings with some fried prawns.
