Sweet and Sour Fish

Ingredients

Pike/Other fish 3 1/2 Pound
Salt To Taste
Hot fish stock 1 Cup (16 tbs)
Ginger snaps 4
Brown sugar 1/2 Cup (8 tbs)
Vinegar 1/4 Cup (4 tbs)
Seeded raisins 1/4 Cup (4 tbs)
Onion juice 1/2 Teaspoon
Lemon 1 , seeded and sliced

Directions

1. Clean, slice and salt fish and let stand for several hours.

2. Simmer 20 minutes, drain and bone, reserving 1 cup of the fish stock.

3. Combine with remaining ingredients; cook until smooth and thick, and pour over fish.

4. Serve cold.
