Baked Fish Fillets with Tomatoes

An easy weeknight fish dinner

Ingredients

Cherry tomatoes 2 Cup (32 tbs)
Lemon zest 1 Tablespoon
Garlic cloves 8 , smashed
Salted capers 1 1/2 Tablespoon , rinsed
Olive oil 1/3 Cup (5.33 tbs) , divided
White fish fillets 480 Gram (4 x 120 grams)
Lemon juice To Taste
Sea salt To Taste
Cracked black pepper To Taste

Directions

GETTING READY

1. Preheat the oven to 350 degree F or 180 degree C.

MAKING

2. In a baking dish, place tomatoes, lemon zest, garlic and capers.

3. Drizzle with half of the oil and shake to combine.

4. Pop the dish in oven and bake for 20 minutes.

5. Add the fish fillets to the baking dish and drizzle remaining oil on top.

6. Continue to cook for another 15-20 minutes or until done.

7. Season with salt and pepper.

SERVING

8. Squeeze lemon juice and serve hot.
