How To Make Embutido

I love Embutido. It reminds me of Christmas time in the Philippines and I wanted to remake my version for my family.

Embutido is the Filipino-style meatloaf, traditionally steamed and stuffed with olives, raisins, eggs, and Vienna sausages. Like many of Filipino dishes, Embutido is Spanish-inspired and so delicious.

Ingredients

Ground pork 1 Pound
Kosher salt 1 1/2 Teaspoon
Freshly cracked pepper 1/2 Teaspoon
Spanish onion/Red onion 1 Small , diced
Diced bell pepper 1/4 Cup (4 tbs)
Pimento stuffed olives 10 Ounce (1 small can. green pimento)
Canned vienna sausage/Spanish hard chorizo 5 Ounce
Raisins 1/4 Cup (4 tbs)
Hard boiled egg 1 , quartered
Shredded carrots 1/2 Cup (8 tbs)
Soy sauce 2 Tablespoon
Bread crumbs 1/2 Cup (8 tbs)

Directions

GETTING READY:

Preheat oven to 350F.

MAKING:

In a large bowl, combine ground pork, kosher salt, cracked pepper, onion, bell pepper, stuffed olives, raisins, carrots, soy sauce, bread crumbs and mix well.

Spread the mixture on foil and add sausage and eggs.

Roll as shown in the video and refrigerate for about 20 minutes.

Pop into oven and bake for 1 hour or until it reaches 165F.

Allow to rest and then cut into slices.

SERVING:

Serve with banana ketchup, rice and enjoy!
