Cold Bihon Rice Noodle Salad

Ingredients

Rice noodles 8 Ounce (1 package, bihon or vermicelli)
Boiling water 5 Cup (80 tbs)
Shredded carrots 1/4 Cup (4 tbs)
Chopped broccoli 1/4 Cup (4 tbs)
Sliced red bell peppers 1/4 Cup (4 tbs)
Raw spinach leaves 1 Cup (16 tbs)
Shelled edemame 1/4 Cup (4 tbs)
Sliced red onions 1/4 Cup (4 tbs)
Salted peanuts 1/4 Cup (4 tbs)
Sunflower seeds 2 Tablespoon
Shredded rotisserie chicken 1 1/2 Cup (24 tbs)
Soy sauce 1/4 Cup (4 tbs)
Rice wine vinegar 2 Tablespoon
Sweet chilli sauce 1 Tablespoon
Fresh lime juice 1 Tablespoon
Extra virgin olive oil 3 Tablespoon
Kosher salt 1/2 Teaspoon
Fresh cracked pepper To Taste
