Ube Biko

Ube Biko is a crossover between ube halaya and Filipino biko.


Glutinous rice/Sweet rice 1 1/2 Cup (24 tbs)
Granulated white sugar 1 1/4 Cup (20 tbs)
Water 1 3/4 Cup (28 tbs)
Ube powder/Freshly grated purple yam 1/2 Cup (8 tbs)
Salt 1/4 Teaspoon
Ube flavoring 1/2 Teaspoon
Coconut milk 4 Cup (64 tbs)



In a large pot, combine rice and water, cover and turn on the heat. Bring to a boil and turn the heat to simmer. Cook until water is absorbed, while stirring in between.

In another pot, pour in the coconut milk and bring to boil.

Gradually add in the sugar while stirring. Stir in the ube powder and cook for 5 to 7 minutes on low to medium heat while stirring.

Add salt and ube flavoring. Continue to cook for another 3 minutes.

Pour in coconut mixture to the rice and mix well. Continue to cook while stirring until the rice is completely cooked.


Transfer the Ube Biko to a serving tray lined with banana leaves and top with toasted grated coconut. Serve and enjoy!
