This sumptuous, easy-to-make, sweet dish can be made in advance and refrigerated. Figs have been used as they are low in calories as compared to other dried fruits and are also rich in fibre. To control the calorie count further, I have used low-fat milk and restricted the sugar to minimal.

Dried figs 8
Cardamom powder 1/4 Teaspoon
Chopped china grass 1/2 Cup (8 tbs) (agar
Low fat milk 2 1/2 Cup (40 tbs) (99.7% fat
Sugar 1 Tablespoon
Water 1 1/4 Cup (20 tbs) , divided
For garnish
Saffron strands 1 Pinch (few of them)

1. In a bowl, pour ½ cup water and soak figs for 1 hour.

2. After 1 hour, blend the figs along with the water into smooth paste and set aside.

3. In a non-stick pan, combine ¾ cup water and China grass (agar-agar). Stir occasionally and cook over low flame for 2 minutes or until the china grass melts.

4. Add milk, sugar, cardamom powder and fig purée. Stir and cook over low flame for 2-3 minutes or until sugar dissolves completely. Remove pan from flame and set aside to cool slightly.

5. Into 6 individual glasses/ bowls, pour the mixture and refrigerate for 3-4 hours or until set.

6. Garnish with saffron and serve chilled.
