Annapolis Valley Apple Butter

Ingredients

Cooking apples 5 Pound , peeled, cored, sliced for 12 cups
Brown sugar 3⁄4 Cup (12 tbs)
Cinnamon 3 Teaspoon
Whole cloves 3 Teaspoon
All spice 1⁄2 Teaspoon
Nutmeg 1⁄2 Teaspoon
Ground ginger 1⁄2 Teaspoon
Apple cider 3 Cup (48 tbs)

Directions

Cook apples in 1 cup cider until soft.

Process or blend, 2 cups at a time, until pureed.

For each cup of pulp, add 3/4 cup dark brown sugar.

Add spices and 2 cups apple cider.

Bring to boil, reduce heat and simmer until thick—at least 4 hours.

Bottle in hot, sterilized jars and seal.
