Betty demonstrates how to make Smothered Swiss Steak. This is a hearty meal that is easy and inexpensive to make.

Canned beef broth | 6 Cup (96 tbs) | |

GETTING READY
1. Preheat the oven to 325F.
MAKING
2. Season the steaks with salt and pepper. In a skillet add peanut oil and olive oil (1/2 cup). In a pot, place butter, turn on the heat and allow to melt.
3. In another skillet, heat olive oil (2 tablespoon), add capsicum and onion, saute until soft. Add tomatoes, stir to mix and simmer.
4. To the pot with melted butter, add corn starch, stir until the mixture gets thickened, add beef broth, and cook for sometime until the gravy looks thick, add more corn starch, if required. Add in the tomatoes and stir.
5. In a zip loc bag, place flour, place the cubed steaks 2 at a time and shake to coat, place them in the hot oil ( skillet with peanut oil and olive oil), brown from both sides. Transfer to a paper towel. Remove the oil from skillet, leaving behind the fond.
6. Pour in half of the prepared gravy, scrape the bottom and stir, allow to cook for few minutes. Place in a 325F oven for about 20 minutes.
SERVING
7. Serve along with bread slices or mashed potato topped with the reserved sauce.
