Good Food Ireland - Traditional Irish Sherry Trifle by Tom O'Connell from O'Connells in Donnybrook.


For the sponge cake
Free range eggs 15
Caster sugar 140 Gram
Plain white flour 140 Gram
For greasing and dusting
Butter 1 Tablespoon (For greasing)
Sugar 1 Tablespoon
Flour 1 Tablespoon (For dusting)
For the custard
Raspberry jam 225 Gram
Medium sherry 175 Milliliter (150 ml
Free range eggs 5
Caster sugar 1 1/4 Tablespoon
Pure vanilla essence 3/4 Tablespoon
Rich milk 1 1/4 Cup (20 tbs)
For the garnish
Whipped cream 650 Milliliter
Fresh raspberries 1 Cup (16 tbs) (and/or strawberries and blueberries)



1. Preheat the oven to 190 degrees C. Line a Swiss roll tin with grease proof paper. Brush with butter and dust with flour and sugar. Set aside.


2. Place a bowl over a saucepan of simmering water and add in the eggs and caster sugar. Whisk the mixture until light and fluffy.

3. Take off of heat and whisk until the mixture has cooled. Set aside.

4. Sieve in 1/3rd of the flour into the egg mixture and gently fold in, add in the remaining flour and mix.

5. Pour the batter into the prepared tin and bake for 12 – 15 minutes.

6. Lay down a parchment paper and sprinkle some caster sugar over it, turn the sponge on to the paper and set aside to cool.

7. In a bowl, whisk together the eggs, sugar and vanilla.

8. Heat the milk to the shivery stage and pour in the egg mixture while whisking continuously.

9. Pour the mixture into a heavy saucepan and stir over gentle heat until it coats the back of a wooden spatula.

10. Spread the jam evenly over the sponge cake and slice into ¾ inch.


11. Place the sponge rolls in a serving glass and pour in the vanilla custard, followed by the sherry and press with a knife. Top with whipped cream and raspberries.


12. Serve the trifle for dessert.
