How to Cook Colcannon

Ingredients

Potatoes 6 Large , cooked and mashed
Buttermilk 1/2 Cup (8 tbs) (1/3
Butter 1/3 Cup (5.33 tbs)
Salt and pepper To Taste
Green cabbage 4 Cup (64 tbs) , finely shredded
Cayenne pepper To Taste (a few dash)
Paprika To Taste

Directions

MAKING

1. In large sauce pan, bring cabbage to a boil on medium high heat. Reduce to simmer for approximately 10 minutes or until tender, but not overcooked. Drain well and set aside.

2. In a large bowl, combine mashed potatoes, butter, buttermilk, salt and pepper. Mix well and add cooked cabbage and cayenne pepper. Combine thoroughly and season again with salt and pepper to taste.

3. Into a casserole dish, transfer the mixture, smooth out and sprinkle paprika on top. Broil for a few minutes to brown the top, if desired.

SERVING

4. Serve hot.
