Black olive pesto sandwich,much favourite pesto made using walnuts is used as a spread to make this sandwich...walnut does wonders for the brain. .In fact, its shape is just like our brain! That's why it is believed to be the best brain food. Basil being good source of iron and it is necessary for blood formation and thus in supplying nutrients and oxygen to the brain cells. However who do not like pesto can just munch 2 to 3 walnuts every day.

Ingredients

For the black olive pesto
Chopped black olives 1 1/2 Tablespoon
Fresh basil leaves 1 Cup (16 tbs)
Roasted chopped walnuts/Pine nuts 1/4 Cup (4 tbs)
Chopped garlic 1 Teaspoon
Olive oil 1 Tablespoon
Salt and ground black pepper To Taste
Other ingredients
Whole wheat bread slices 8 , lightly buttered
Butter 1 Tablespoon
Cheese slices 4
Tomato slices 16

Directions

GETTING READY

For Black Olive Pesto:

1. In blender, add basil, walnuts/pine nuts, garlic, olive oil, salt, and pepper. Blend into a smooth paste using little water.

2. Add the olives and mix well. Divide the pesto into 4 equal portions and set aside.

MAKING

3. On a clean dry surface, place the bread slice with the buttered side facing upwards.

4. Spread a portion of the black olive pesto evenly on it.

5. Place a cheese slice and 4 tomato slices on top and sprinkle salt and pepper.

6. Cover with another slice of bread with the buttered side facing downwards. Cut the sandwich into 2 equal pieces. Repeat the steps to make more.

SERVING

7. Serve immediately.
