Russian salad sandwich is a cold sandwich that is perfect for hot summer afternoons. The chopped pineapple contrasts well with the remaining ingredients, and adds a crispy, tangy feel to the sandwich. Use freshly-crushed pepper for best flavor and aroma.

Ingredients

For salad
Chopped boiled vegetables 3/4 Cup (12 tbs) (carrots , green peas and french beans)
Mayonnaise 1/2 Cup (8 tbs) (readymade)
Fresh cream 2 Tablespoon
Chopped pineapple 1/4 Cup (4 tbs) (canned)
Boiled peeled potatoes 1/4 Cup (4 tbs) , chopped
Salt To Taste
Other ingredients
Bread slices 8
Butter 4 Teaspoon (for spreading)

GETTING READY

FOR RUSSIAN SALAD

1. In a bowl, combine together mixed vegetables, fresh cream, mayonnaise, potatoes, pineapple, salt, and pepper, and mix properly. Divide this Russian salad mixture into four equal parts, and keep aside.

MAKING

2. Take two bread slices and apply little amount of butter on both. Now spread one portion of the salad mix on one bread slice with buttered side facing upwards. Cover with another bread slice, with buttered side facing downwards. Cut the sandwich diagonally into two triangles.

3. Make three more sandwiches with the remaining salad mix and bread slices.

SERVING

4. Serve the sandwiches with potato wafers and tomato ketchup.
