Potato | 2 Pound , peeled, shredded into water | |
Eggs | 2 Large | |
Flour | 2 Tablespoon | |
Onion | 1/2 Large , grated into water with potatoes | |
Salt and pepper | To Taste | |
Peanut oil | 2 Tablespoon ((as required)) |
GETTING READY
1.Squeeze the water out of the potatoes and onion and transfer into a bowl. Set aside.
MAKING
2.In another bowl add the flour, eggs, salt and pepper. Whisk well till combined. Add the squeezed out potatoes and onions and continue to mix well till all are evenly coated.
3.Heat oil in a frying pan on medium heat. Put small portions of the mixture into the frying pan and cook till both the sides turn golden brown.
SERVING
4.Serve the potato pancakes hot with sour cream or any dip of choice.
TIPS
It is preferred if the potatoes and onions are squeezed just before adding to the egg and flour mixture.
