A perfect shortbread with a hint of coffee and a lot of chocolate flavor without a lot of work. Imagine yourself sitting down with a cup of coffee or tea, a couple of shortbread cookies fresh from the oven, allowing your cares to go away!

Instant coffee granules | 3 Teaspoon | |
Powdered sugar | 1 Cup (16 tbs) | |
Vanilla extract | 1 Teaspoon | |
Mini chocolate chips | 1 Cup (16 tbs) | |
For dusting | ||
Flour | 1 Teaspoon (For dusting) |
GETTING READY
1. Sprinkle flour on parchment or waxed paper and set aside.
MAKING
2. In mixer add butter, coffee granules, powdered sugar and vanilla. Slowly add flour and beat to combine.
3. Fold in chocolate chips.
4. On floured parchment or waxed paper, transfer the dough, roll and wrap tight. Place in the refrigerator for one hour.
5. Remove dough from refrigerator and slice into about 1-inch rounds.
6. Place rounds on a greased cookie sheet, flatten just slightly with your fingers or a fork
7. Bake at 350 degrees for 15 minutes.
SERVING
8. Serve with a cup of hot coffee and enjoy!
