Veal Cordon Bleu

Love love love this recipe, have done all my life. It never gets old and as our tastes have matured and the variety of hams and cheeses on the market have grown, this dish keeps on taking on a new palate.

If you still love the tasty cheddar and cured ham, go with it, but honey baked hams and smooth melting Swiss cheeses add a nice touch.

I also always use homemade breadcrumbs, made with a sourdough bread and fresh herbs from my garden and finely grated parmesan.

I serve my cordon bleu with my homemade tomato soup as a sauce, it's a winner every time and always looks impressive.

This recipe is not as hard as it sounds, give it a try this weekend. And don't forget the soup as well. Happy cooking!

Ingredients

For the rolls
Veal fillets 4 Medium , pounded
Cured ham slices 4 Medium
Swiss cheese slices/Gruyere cheese slices 4 Medium
For breading the veal rolls
Eggs 1 Medium , beaten
Dried breadcrumbs 1 Cup (16 tbs)
Dried oregano/Marjoram To Taste
Finely grated parmesan cheese 1/4 Cup (4 tbs) (Or as needed)
Freshly ground black pepper To Taste (Optional)
For pan frying
Butter 2 Tablespoon
Olive oil 1 Tablespoon

Directions

GETTING READY

1. Pound the veal steaks till quite thin.

2. Place a slice of ham and cheese on each steak. Roll the steak to encase the cheese and ham and secure with a toothpick.

3. Mix the dried oregano/marjoram and grated parmesan with the breadcrumbs and season to taste with the black pepper (if using).

4. Place beaten egg in a wide bowl and the seasoned breadcrumbs in another. Coat each roll with beaten egg and then breadcrumb mixture. Set these aside.

MAKING

5. Preheat oven.

6. Heat a little butter and oil in a pan and pan-fry the rolls over low heat until brown all over.

7. Place the fried rolls in a baking dish or pan and bake in a moderate oven for about 15 minutes or until cooked through.

SERVING

8. Serve with a tomato based sauce or Buerre Blanc Sauce or a thinned Hollandaise Sauce and salad or vegetables.
