Ingredients

Cherry tomatoes 1 Box , halved
Yellow pepper 1/2 , cut into small cubes
Green onion 1 Bunch (100 gm) , cut into diagonal pieces
Fresh herbs 1/4 Cup (4 tbs) , mince (parsley, thyme and dill)
Zest of lemon 1
Tilapia fillet 12 Ounce , cut in half lengthwise (1 large)
Flour 1/4 Cup (4 tbs) (as needed)
Juice of lemon 1
Olive oil 2 Tablespoon

Directions

GETTING READY

1. Cut fish fillet into half lengthwise and lightly coat it with flour on both sides.

MAKING

2. In a large saute pan, heat olive oil and place the thickest fillet in it. When the fish is nice and brown, flip it over and add the other piece. Fry until cooked through and then set aside.

3. In the same pan, add cherry tomato, yellow pepper, green onion, fresh herbs, lemon zest, and lemon juice. Mix well. Cook for 2 minutes or until everything is heated through and tomatoes are soft.

SERVING

4. Serve cherry tomato salsa on top of tilapia fillets.
